Hello everyone. We always had a good supply of chicken at our house, seeing as how my Father was in the poultry business – Poppy Foods Company. So, this was a go-to for my Mom on a busy day. Hope you like it.
1 cut up chicken or your favorite parts
1 or 2 potatoes
Garlic (chopped) to taste
2 or 3 carrots (optional) I love roasted carrots
Fresh Flat Leaf Parsley
Salt & Pepper
Grated Romano Cheese (the more the better)
Oh, I almost forgot about 1/2 cup of water
Salt and pepper mixture to taste. Sprinkle chopped garlic, parsley and cheese over the top of all chicken and veggies. Lastly, place butter (for whole chicken 1/2 cube) on the top of everything else. Pour the water in anywhere in the pan, don’t ask me why, Mom always did.
Cover with foil and bake for 45 minutes @ 350 degrees. Take cover off and let chicken and potatoes brown. About another 15 minutes – just keep watching until you think it’s brown enough.
I don’t think I’ve left anything out. Whats great about this recipe, you can use any amount of spices, cheese, or veggies you like and it will turn out tasty. As a family, we use to dip our Italian bread in the buttery/olive oil mixture at the bottom of the pan, after all the chicken and potatoes were gone, we didn’t waste a bit. Enjoy !!!
